1 15 oz can Garbanzo Beans (Chickpeas), drained with 1/4 cup liquid reserved
1-2 cloves garlic, peeled
Juice of 1 lime
1/2 teaspoon salt
2 tablespoons olive oil
2 ripe avocados, pitted and halved
In a blender or food processor, add garbanzo beans, reserved liquid, garlic cloves, lime juice, and salt. Blend until combined stopping to scrape down the sides if needed. Add olive oil and avocados and blend until combined, again, stopping to scrape down the sides if needed. Drizzle with a little extra olive oil if preferred.
At this point you can go crazy with add ins, but I wanted to keep it simple. Some options might be adding 1-2 tablespoons tahini, 1/2 teaspoon cumin, and/or a little cilantro.
This hummus is so light and airy and delicious with pita chips or pretzels.
