Today it is cold and rainy, so we picked up some delicious looking chicken noodle soup from Costco and I decided we needed cheddar biscuits to go with it. YUM. YUM!
2 Cups All-Purpose Flour
1 Tablespoon Baking Powder
1/2 Teaspoon Garlic Salt
2 Teaspoons Sugar
8 Tablespoons (1 Stick) Butter, cubed
1 Cup Shredded Cheddar Cheese
3/4 Cup + 2 Tablespoons Buttermilk
1 Tablespoon Melted Butter
Garlic Salt to Taste
Pre-heat oven to 425 degrees Fahrenheit
In a large bowl, mix together flour, baking powder, and garlic salt. Cut in butter to the flour mixture until the butter is the size of peas. Add cheese and mix in with your hands. Pour in buttermilk and combine until just incorporated
On a floured surface, knead dough, adding more flour as needed, until just barely no longer sticky. Roll out and cut into squares with a pizza wheel or use a round biscuit cutter.
Bake for 15 minutes or until golden brown. Once out of the oven, brush with melted butter and sprinkle with additional garlic salt.
